Pumpkin Spice Cupcakes




I'm so excited for my first blog post! I got this recipe from tasteofhome.com and they were amazing. I made these for Thanksgiving, but they're definitely good for anytime around fall.



I got all of my pumpkin stuff from Trader Joe's


The batter looks a little weird, but it surprisingly tastes great


Yield: 12 cupcakes

Ingredients:

6 tablespoons room temperature butter
1 1/2 cup sugar
2 eggs
1/2 can pumpkin (7 1/2 ounces)
1/4 cup cake flour
1/4 + 1/6 cup all-purpose flour
1/2 tablespoon pumpkin pie spice
1/2 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon baking soda
1/4 teaspoon ground ginger
1/2 cup milk

Directions:

1. Preheat the oven to 350 degrees
2. In a large bowl beat the butter and sugar for about 5 minutes. Then  add the eggs one at   a time. Add the pumpkin and beat well.
3. In another bowl sift both flours, pumpkin pie spice, baking powder, cinnamon, salt, baking soda, and ginger.
4. Combined the milk, flour mixture, and pumpkin mixture together and beat well.
5. Line a cupcake tin with liners and fill almost to the top
6. Bake for 22 minutes and then let them cool completely

Cinnamon Cream Cheese Frosting:

1/2 package softened cream cheese (4 ounces)
1/4 cup softened butter (4 tablespoons) 
2 cups confectioners sugar
1/2 teaspoon vanilla extract
1 teaspoon ground cinnamon

1. Beat the cream cheese and butter together in a mixing bowl
2. Add the confectioners sugar, vanilla extract, and cinnamon and beat well.
3. Frost on cooled cupcakes.
(I used Wilton tip 2D but any tip works)

I got this awesome idea from 52kitchenadventures to make Thanksgiving cupcake liners too. They made the cupcakes look super cute and festive.
