Cute Snowman Cupcakes



I saw this super cute idea on Pinterest for snowman cupcakes and I really really wanted to make them. As much as I love Pinterest the only problem was that there were no directions on how to make them so I decided that I would make something up on my own and share with you guys! It didn't take a genius to figure out how to make them, I just used store bought vanilla frosting for the face, mini chocolate chips for the eyes , and candy canes for the nose. You can use any flavor for the cupcakes like peppermint, red velvet, or plain vanilla like I did.





Directions:

  1. Frost icing on cupcakes
  2. Add the chocolate chips in a half circle close to the bottom for the mouth
  3. Add two chocolate chips pretty close together for the eyes
  4. Use a knife to cut a small piece of the candy cane
  5. Place the candy cane between the mouth and the eyes
 
These are perfect for a holiday party and they aren't super hard to make so I hope you enjoy them and have an amazing Christmas!

Carrot Cake Cupcakes



Fall is over, but I still wanted to make these carrot cake cupcakes! You have to be willing to put in a lot of effort grating the carrots, but please don't let that stop you. These cupcakes are absolutely delicious!




Yield: 12 cupcakes

Ingredients:

1 cup flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1/4 tsp nutmeg
2 eggs
3/4 cup sugar
1/4 cup brown sugar
1/2 tsp vanilla extract
1/2 cup vegetable oil (Don't forget it!!!)
1-1/2 cup grated carrots

1. Preheat the oven to 350 degrees and line cupcake tin with liners
    (Grate carrots)
2. Sift flour, baking soda, cinnamon, salt, and nutmeg together in a bowl and mix
3. In a large mixing bowl, beat eggs, sugar, and vanilla and then add oil
4. Add the flour mixture and blend
5. Mix in grated carrots
6. Fill cupcake tin (These cupcakes rise a lot, so don't worry about not filling them all the way)
7. Bake for 21 minutes

Cream Cheese Frosting:

1/2 package cream cheese (4 ounces)
2 tablespoons butter
1/2 tsp vanilla extract
1-1/2 cup powdered sugar 

1. Beat cream cheese, butter, and vanilla
2. Add sugar and beat well
3. Pipe on cooled cupcakes (I used Wilton 1M)
4. ENJOY <3

Pumpkin Spice Cupcakes




I'm so excited for my first blog post! I got this recipe from tasteofhome.com and they were amazing. I made these for Thanksgiving, but they're definitely good for anytime around fall.



I got all of my pumpkin stuff from Trader Joe's


The batter looks a little weird, but it surprisingly tastes great


Yield: 12 cupcakes

Ingredients:

6 tablespoons room temperature butter
1 1/2 cup sugar
2 eggs
1/2 can pumpkin (7 1/2 ounces)
1/4 cup cake flour
1/4 + 1/6 cup all-purpose flour
1/2 tablespoon pumpkin pie spice
1/2 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon baking soda
1/4 teaspoon ground ginger
1/2 cup milk

Directions:

1. Preheat the oven to 350 degrees
2. In a large bowl beat the butter and sugar for about 5 minutes. Then  add the eggs one at   a time. Add the pumpkin and beat well.
3. In another bowl sift both flours, pumpkin pie spice, baking powder, cinnamon, salt, baking soda, and ginger.
4. Combined the milk, flour mixture, and pumpkin mixture together and beat well.
5. Line a cupcake tin with liners and fill almost to the top
6. Bake for 22 minutes and then let them cool completely

Cinnamon Cream Cheese Frosting:

1/2 package softened cream cheese (4 ounces)
1/4 cup softened butter (4 tablespoons) 
2 cups confectioners sugar
1/2 teaspoon vanilla extract
1 teaspoon ground cinnamon

1. Beat the cream cheese and butter together in a mixing bowl
2. Add the confectioners sugar, vanilla extract, and cinnamon and beat well.
3. Frost on cooled cupcakes.
(I used Wilton tip 2D but any tip works)

I got this awesome idea from 52kitchenadventures to make Thanksgiving cupcake liners too. They made the cupcakes look super cute and festive.
